Cheese loaves with entire cheese rind can not be packed with the traditional vacuum packaging technology. The air locked in the cheese can not escape through the impermeable cheese rind.
The loaf is swelling, ruptures are developing inside. When cutting or portioning the cheese the ruptures become visible and the cheese might fall apart.
VC999 Packaging Systems created a special design of the vacuum chamber machine VC999 K6A. With the VC999 K6 Special cheese loaves with entire cheese rind can be vacuum packed in pouches or shrink bags.
The chamber machine K6A was modified and equipped with a vacuum snorkel / double-stage vacuum. The K6 Special is equipped with three sucking nozzles / snorkels.
Two are located in front and one lateral. This layout is very suitable for individual packaging sizes.
In order to evacuate, the open bag has to be laid around at least one of the three snorkels. The double-stage vacuum system will then be activated by use of white push buttons at the corresponding sucking nozzle.
The evacuation process has two steps. First the air of the large machine chamber will be evacuated according to a vacuum value set before. Then the air inside the bag (little chamber) will be evacuated to the vacuum value set before, through snorkel.
Afterwards the bag is sealed. Thanks to the pressure and counter pressure the loaf does not swell and ruptures will be prevented. The cut surface is thus intact. Both round and angular shaped cheese loaves can be packaged with the VC999 K6 Special.
